Breakfast is the most important meal of the day, but it can also be the most stressful. If you’ve got a busy day ahead of you or need to hop out the door quickly, it can be easy to forget or make the mistake of grabbing something unhealthy. Overnight oats have been a craze for quite some time now. They’re the perfect way to prep something delicious ahead of time for one day or a whole week. Between the oats, chia seeds and milk, you’re sure to get a good serving of protein, perfect for after a morning workout and to keep you full all morning and away from any naughty snacks.

The base for this recipe tastes like straight-up dessert thanks to the delicious milk and vanilla combination. This blueberry version is delicious any time of year with either fresh or frozen blueberries, but feel free to alter the recipe with seasonal fruit. Switch up the almond milk for coconut milk and use some tropical fruits like mandarin oranges and pineapples and add some toasted coconut if you’re feeling the island vibes OR try strawberries and a few dark chocolate chips when you’re feeling fancy. Whatever you decide, you’ll be so happy when this little jar of goodness is sitting in the fridge waiting for you as you rush out the door. (And now that you’ve saved some time, take a few minutes in the car to meditate and breath deep). Enjoy!

Blueberry Pie Overnight Oats

serves 1, make several jars to serve more

1/2 cup old-fashioned oats
1/2 cup almond milk
1 Tbsp. brown sugar or maple syrup
1 Tbsp. chia seeds
1 tsp. pure vanilla extract
pinch of cinnamon
1/4 cup fruit, like blueberries (frozen work well!)

Mix all ingredients together in a wide-mouthed pint-size mason jar. Leave overnight or up to a week in the refrigerator. Top with more fruit in the morning and eat!
